2T lemon juice
8 oz. mascarpone cheese
3 thick slices of fresh pineapple, (6 halved)
¼ c. + 2T toasted pecans
Preheat oven to 375. Toast pecans in skillet until golden. Set aside. Mix the lemon juice, honey, and mascarpone cheese in a bowl until well combined. Bake pineapple slices for 20 minutes. A generous dollop of mascarpone tops each slice. Serve with your favorite Luhse Tea!
*Can substitute mascarpone with ¾ c. cream cheese beaten with ¼ c. heavy cream.
