Tomato Coconut Soup - Addictive Spin on an Old Favorite

2c sweet onion
1c celery
2T olive oil
1 – 28oz can crushed tomatoes
2t oregano
1/4t Crushed
1/8t cayenne pepper
2 bay leaves
1 – 12oz can light, or regular coconut milk

Dice onion and celery. Sauté in oil until tender. Stir in tomatoes, oregano, Crushed, cayenne and whole bay leaves. Simmer 5 minutes. Stir in coconut milk. Remove bay leaves. Add to a blender until smooth.
